Cheesy Chicken(ey) Wontons

We have so many wonton wrappers left over I decided that I needed to use them before they went bad. Since I haven't been feeling my best this week--I've gone the last two days without cooking. So I hiked up my big-girl britches and went in the kitchen and started cooking. {tear/sigh/tear}.

(On a side note: My pregnancy has made me increasingly more tired and unable to do what I need--so I think I'm going to space out how often I cook dinner. As long as the boy gets fed, then us older folks can fend for ourselves!)

Either way, for dinner I made some  cheesy chicken wontons. We had plenty of chicken and cheese so I threw these two ingredients together and wa-la: WE HAVE A MEAL!!!

Here's what you will need:

  • Wonton Wrappers
  • Shredded Chicken
  • Cheese
  • Seasonings of your choice
The Philadelphia Santa Fe Chicken mix is completely optional. But I used this to mix with the shredded chicken and cheese.

This is what I used to season the chicken.

The tostitos dip is used for dipping the wontons.

First step is to season the chicken. Here I used cayenne pepper and regular pepper. Then I boiled the chicken for 30 minutes.

After boiling the chicken, I used onion powder, garlic powder and seasoning salt (you can use smoked paprika if you like, it makes a better taste) and sprinkled over the chicken. I then put the boiled chicken in Canola oil for 3 minutes to give the skins a nice crispy taste. Boiling is completely optional, but I did this for my own reasons.

After the chicken is complete--you need to allow it to cool and then shred.

I then mixed together cheese, Santa Fe mix and dry ranch together along with the chicken and allowed the boy to stir!!

Now here is the fun part. Take your wontons and begin filling with the mix. I did the first few, but because I wasn't feeling well I let DH takeover. I think he may have used about a tablespoon of mix in each wonton.

Then fry in canola oil.

All done (horrible picture I know)

ENJOY!!!
