Monday Night Madness: Antipasto Squares

I am really under the weather today. Not sure what's going on, but mini-me is lying in a very bad spot-so much to the point I can barely move. I decided at 5:15 to get up out of bed (finally) and finish up some dishes and make dinner. I needed something very easy and relatively quick to eat so I decided to put out my arsenal of recipes and for the antipasto squares.

I haven't made these in forever. It's been since at least 2007, that I've made this and I almost forgot how to. I found several versions of this recipe online, none of which really stuck out at me. So I decided to combine 6-7 recipes that I found and try something new.

What you need:
(2) Cans of Crescent Rolls (I used the big buttery/fluffy kind)
1/3 lb salami (I used the hard salami not Genoa, not a fan of the seeds)
1/3 lb pepperoni
1/3 lb ham
1/3 lb swiss cheese
1/3 lb provolone cheese
3 eggs
3 tablespoons parmesan
1/2 teaspoon pepper

I got all of these items from the deli, after I started cooking I realized I could have had them sliced just a tad bit thinner. But whatever.....

Grab your casserole dish and spray with some cooking spray. Roll out one can of crescent rolls into the bottom of the pan and begin layering ingredients. Salami, provolone, ham, swiss and pepperoni.


In a mixing bowl, combine eggs (beat lightly), parmesan cheese and pepper. Stir to blend and pour 3/4 of mixture on top of items in dish. Make sure you get a nice even coat over ingredients. Unroll other can of dough and pour rest of mixture on top of dough. Spread evenly.


Cover pan with foil and pop into oven. Cook covered for 30 minutes. Remove foil, and cook for additional 15 or until light brown and fluffy.

Serve hot and enjoy!!!
