Breakfast Recipe: Egg La-La

 I normally don't do breakfast recipes because it's really nothing to them. But this morning I made something so heavenly and divine I just had to share. (I didn't think to take pictures, I immediately devoured it as soon as I finished cooking).

Egg la-la is a name the boy made up. Not sure if this recipe is floating around somewhere, probably is--but for me it was an accidental creation.



What you need:

2 eggs (or however many you need depending upon how many people you are cooking for)
Green Pepper
Red Pepper
Basil
Pepper
Texas Pete (because I love hot stuff)
Avocado
Bacon
Bread
1/4 tsp Milk
1/4 cup Cheese
Cooking Spray

I turned this into a sandwich which is why bread is on the list, but if you decide to just eat the eggs scrambled that's fine too!

Whenever I make scrambled eggs I always put 1/4 teaspoon of milk in the egg mixture to make them extra fluffy. I also added 1/4 cup of cheese to the eggs in a bowl before stirring. This makes them nice and cheesy and I won't have to add cheese later.

Cut the peppers and avocado to your liking (I diced them of course) and throw into mixture.
 Mix in salt, pepper, basil and Texas Pete (if you like) and stir.

Pour mixture into pan and stir as usual.

If you are making this into a sandwich with bacon like I did, then you should cook the bacon, toast the bread, and wa-la: you have an egg la la sandwich!!!
