I love my nachos. I swear I do. These would have to be the best chicken nachos I think I've ever made. And it was all by accident. Sorry-no pictures. I didn't think to take any when I made them, but trust me, you won't need any.
2 lbs chicken breast (or fajita strips if you're too lazy like I am sometimes to cut them up)
Montreal Seasoning
2 cans tostitos salsa cheese
2 cans tostitos salsa (I used mild)
1 bag of shredded cheese
Chips or Crackers
Season chicken with Montreal seasoning. Make sure you get good coverage. This seasoning does have a kick to it, so use as much (or as little as you would like).
Cut chicken into small pieces and cook in frying pan. I normally cook them in a little olive oil with some minced garlic just to give it an extra kick. Completely up to you. If you choose to use garlic, remember not to let it burn.
After chicken has completely cooked, add shredded cheese, salsa cheese and salsa. Stir until well mixed. Let simmer for about 3-5 minutes making sure it does not stick to bottom of pan.
Put into nicer pan/dish and serve hot!!! Enjoy the game.
*This recipe will feed about 10-15 people (adults w/ multiple plates). So if you don't need that much, please adjust it to however many you need. *
