I normally don't do breakfast recipes because it's really nothing to them. But this morning I made something so heavenly and divine I just had to share. (I didn't think to take pictures, I immediately devoured it as soon as I finished cooking).
Egg la-la is a name the boy made up. Not sure if this recipe is floating around somewhere, probably is--but for me it was an accidental creation.

Cheesy Chicken(ey) Wontons
We have so many wonton wrappers left over I decided that I needed to use them before they went bad. Since I haven't been feeling my best this week--I've gone the last two days without cooking. So I hiked up my big-girl britches and went in the kitchen and started cooking. {tear/sigh/tear}.
(On a side note: My pregnancy has made me increasingly more tired and unable to do what I need--so I think I'm going to space out how often I cook dinner. As long as the boy gets fed, then us older folks can fend for ourselves!)
Either way, for dinner I made some cheesy chicken wontons. We had plenty of chicken and cheese so I threw these two ingredients together and wa-la: WE HAVE A MEAL!!!

Monday Night Madness: Antipasto Squares
I am really under the weather today. Not sure what's going on, but mini-me is lying in a very bad spot-so much to the point I can barely move. I decided at 5:15 to get up out of bed (finally) and finish up some dishes and make dinner. I needed something very easy and relatively quick to eat so I decided to put out my arsenal of recipes and for the antipasto squares.
I haven't made these in forever. It's been since at least 2007, that I've made this and I almost forgot how to. I found several versions of this recipe online, none of which really stuck out at me. So I decided to combine 6-7 recipes that I found and try something new.

Saturday Dinner: Brown Butter Ravioli w/ Chicken, toasted walnuts & Sage
It never ceases to amaze me the amount of things DH and the boy will and will not eat. Lately I've resorted to cooking what I feel like and if they eat it, then they eat it. It not--then oh well. I came across this recipe while searching for ravioli recipes earlier today and I figured it would be worth a try.
Needless to say it was super easy, quick and delicious. Gotta love simplicity.

What's on the menu for tonight?
So I've had this fascination with lobster wontons for a while now. There is a place here, that serves them like no other--the only thing it's $12 for 6. While that may be great on occasions, I'm practicing this whole fiscal responsibility thing, so paying that much for that little no longer makes any sense to me. (photo)
Don't get me wrong--we will go out every once in while just to say we did, but with the economy and two kids, it's better to save that $40-$60 and stick it in a piggy bank somewhere. So I decided that while I can't have those wontons (truthfully I'm not a huge fan of lobster anyway), I decided to google wonton recipes, I came across this awesome site Can you stay for dinner? (Don't you just love the name?). They had this amazing recipe for petite lasagna using wonton wrappers. Let's just say this is a must have in my life right now.

Yummy goodness at it's finest
So in trying to find recipes that a finicky eaters like my family will eat is always nearly impossible. One thing I can say that we love is pasta. It's the one bond that's keeps us together, and keeps me from making EVERY NIGHT every man for himself night. So while reading one of my favorite blogs Good. Food. Stories. I found this amazing recipe for Puttanesca. I want to try it, so we will see in the coming weeks if this will be possible. I hope so.
